Strawberry Sorbet without the guilt.

After your visit to the grocery store, everything is put away and stored in the right place. A couple of days go by and you decide to have a snack when you realize your strawberries are starting to go bad. You’re probably thinking, “Oh no! I just bought them, what do I do?” Don’t panic! Instead of wasting your money in the garbage, why not make a long-lasting dessert; Strawberry Sorbet.
Strawberry sorbet is a refreshing frozen dessert consisting of fruit juice and water without any extra calories, plus it’s dairy-free. Whereas gelato and ice cream is primarily made with milk and/or cream to execute a creamy texture. Now, you can absolutely use an ice cream maker for sorbet; however, you will receive the same product without it. I did not use an ice cream maker and it came out just the same.
Blend it up:
Here’s what you will need:
4 cups strawberries
1 cup warm water
¼ cup honey
2 tbsp. lemon juice
4 tbsp. sugar (if needed)
Cut any bruised pieces on your berries and cut them into quarters. Rinse them with warm water, cold water will shock the strawberry and will not produce their natural and bright colours. Drain the water, add all your ingredients; except the sugar, into the blender. Blitz until you receive a smooth consistency.
Transfer:
After your ingredients are mixed together, transfer your mixture to a freezable container with a sealable lid. Make sure your container is flat otherwise you will end up with a wonky sorbet.
Wait:
Once in the freezer, leave it for 4 hours to create a semi-frozen consistency. Once the time is up, take it out and whisk to create a slush. The air will help the sorbet cooperate a flexible texture. Once so, give it a taste to ensure sweetness. If you think it doesn’t need any, leave it. If so, add a tablespoon to every taste-test to your liking.
Patience:
Transfer your sorbet to the freezer once the flavour is to your liking. Leave in the freezer overnight.
The next day, enjoy a refreshing strawberry sorbet. This dessert pairs very well with mint leaves and a splash of peach snaps. It’s light weight and the guilt will disappear. Share with your friends and family on a hot summer day at a BBQ, the beach, a weekend at home, whatever your heart desires.
